You should have seen the look of despair on Josh’s face when we cut open this not-so-soft boiled egg though 😅 Happy to report that it was DELICIOUS, even sans yolky goodness.

Came home late and went straight to cooking (and devouring) this frittata for one. I never even realized til now that a frittata is basically an unflipped, unfolded omelette!
Single serve veggie frittata: sautee spinach in a small skillet. In a separate bowl, whisk 2 eggs then add cooked spinach. Pour mixture into skillet over low-medium heat; add sliced tomato and salt + pepper. Let sit until eggs are firm. I served mine with sliced avocado and a homemade muffin.
When it’s 5pm, you have nothing planned for dinner and there’s no way you’re going to the grocery store during rush hour…you make whatever is in your fridge work.
Behold the power of googling recipes. I had leeks and zucchini that needed to be used…so I googled zucchini leek recipes and voila! Zucchini leek fritters came up! These were so simple! Just shred zucchini, chop up leeks, add an egg, a little flour, salt, pepper & parsley, then cook on a non-stick pan/griddle for about 5 minutes per side. Top with an egg 🍳 or two and voila - simple dinner! Baby ate all of this too (except he didn’t get runny yolks 🙃)

The Perfect Soft Boiled Egg
My favorite part of the egg is the yolk, I can’t get enough of it. It has taken me months to figure out how to make the perfect soft boiled eggs to my liking. Here’s how I make my perfect soft boiled eggs— just the right amount of yolk pouring out. I also paired my eggs with an arugula salad.
Arugula (or mixed greens)
How I made it:
Boil water on a stove top. Once your water is bubbling, add your eggs. Keep boiling your eggs for 5 minutes and 35 seconds. Once your eggs are done, run under cold water or put in cold water for about 1-2 mins. Cut your tomatoes and place on top of your salad. Top with balsamic. Peel your eggs and put on your salad. Season with a bit of salt and pepper, as well as a drizzle of lime. Cut into that perfect egg! .
friyay is already off to a great start because: I hit a new PR for my 8 mile run 🏃🏻♀️, I’ve got this wonderful breakfast plate + mushroom coffee to enjoy ☕️, and I leave for Disney World tomorrow morning! 🏝☀️
I realized that I am far overdue for a rest day, so I made the decision not to pack any workout clothes for my trip and give myself the next week off from working out. sure, it wasn’t an easy decision, but I am definitely proud of myself for making it, and am actually looking forward to the break 😊 my body needs this vacation just as much as my mind does, and I want to fully enjoy my time with my family and the wonderful vacation I get to go on ❤️ with that being said, I may not be posting much/at all this next week while I am away, but fear not, I will probably be sharing some stories of my trip, and I will be back in action again once I get home 💕😎

got a fresh delivery of @majesticgarlic sprouted hummus yesterday so it had to go down! @alvaradostreetbakery sprouted sourdough bread toasted and topped with the original hummus, one soft boiled @vitalfarms organic, pasture-raised egg, fresh thyme (ps how perf did this one turn out?!), and @traderjoes everything but the bagel seasoning. off to yoga in a bit and then gonna try to get my act together and do a little mealprep 😎 hope you guys have the best SUNDAY!!!! #kalejunkie#eeeeeats#f52herbs

Happy Sunday! I’ve been craving this combo since seeing @andapinchoflove make it yesterday, so this sweet potato breakfast happened when I woke up
One toasted tortilla shell topped with my leftover spinach leaves + 1/2 a broiled sweet potato (cut into cubes) + 1/4 sliced avo + 1 poached egg 🤤
Topped with @traderjoes everything but the bagel seasoning + red pepper flakes + @cindyskitchen lemon Tahini dressing

10 minute breakfast ✅ making delicious meals from REAL ingredients doesn’t have to take hours. My tips: roast a big batch of veggies for the week when you do have time, and always keep quick-cook veggies (like zucchini, broccoli, cauliflower rice) on hand for when you’re in a pinch. .
DA GOODS: kale massaged with ACV and @chosenfoods avocado oil, 2 poached eggs (4 minutes, prob could have done shorter), sautéed zucchini, and sliced tomatoes and apple.
Not sure what I call this, what I am sure is it tasted FREAKIN’ AMAZING. 👌🏻 Roasted butternut ‘squaffles’, creamy hemp pesto, spinach, red cabbage, a poached egg and smashed avo, messy but fabulous. 💁🏻♀️
I love salad. I love breakfast. And surprise, I love salad, for breakfast 🥗 It’s a simple way to load up on greens and healthy fats first thing in the morning, along with a little bit of protein from that golden yolk. It might be chilly and overcast here in LA, but at least I can make the sun come out from behind clouds of green spinach 😉☀️.
