Stir fry is one of my favorite ways to use any random veggies I have lying around. Plus it makes for amazing leftovers that are great for school/work lunches.
This stir fry is served over @engine2diet ancient grains blend and has a homemade sauce and shiitake mushrooms, cabbage, broccoli, red bell pepper, shallot, red onion, peas, bean sprouts, and tofu. I topped it all off with some scallions and kimchi.

Zítra to bude přesně měsíc od Vánoc, a tak nastal ten pravý čas, shrnout je bez přehnaných emocí. Upřímně, byly skvělé. Povedly se přesně tak, jak jsem si přála - shlédla se spousta pohádek, snědla se spousta cukroví a vlastně jediné, co nebylo perfektní, bylo moje balení dárků. Vlastně je jen jediná věc, ve které jsem horší, než v balení dárků - balení kluků🙄😂Víc vám ale prozradím až zítra ráno a to i včetně receptu na tuhle buddha bowl s naprosto božím domácím falafelem🤤
🇬🇧It’s been already a month since Christmas so it’s a perfect time to recapitulate it all. Basically, it was awesome. It ended up being exactly how I wished it to be - we watched a lot of fairy tales, ate a lot of cookies and actually the only thing which wasn’t perfect was my skill of wrapping presents. ...aaaaaand we’re back to blue today! We decided to switch it up with a smoothie bowl rather than #nicecream... It’s a bit too chilly for that today 😂 Made with two bananas, a handful of blueberries, 1/4 cup coconut mylk, a tbsp of vanilla coconut yogurt, and a tsp of blue spirulina @rawnice 💙 Topped with blueberries, vanilla sea salt chocolate, and pumpkin seed butter #nomnomnom. Ps Happy Hump Day 🙊
Made some pad Thai-inspired stir-fried noodles. I used some rice noodles because I love the chewy and sticky texture it has especially if cooked right. I’m sorry I didn’t measure the ingredients for the sauce (I will next time!) but for those wondering, the sauce was a mix of some chili sauce, coconut sugar, soy sauce, a little vinegar, sesame oil, and garlic.
For the other ingredients, I just sautéed veggies I had on hand—purple cabbage, leeks, bell peppers, carrots, bean sprouts, and some tofu in a little oil before adding in a bit of the sauce and the cooked noodles. I added more sauce and sesame oil then stir-fried everything for a few more minutes. Finished it off with some fresh lime and lots of sesame seeds. 🌿🍜 •
