Bún bò (English pronunciation: Boon Baw) is a popular dish originated from Central Vietnam. True to Centralist cooking, the broth is a harmony or spicy heat, sourness, saltiness with a hint of sweetness. The broth is prepared by simmering beef bones with bruised lemongrass stalks then flavored toward the end with a clarified solution of shrimp paste (mắm tôm). A pinch of sugar and spicy hot-pepper oil are added later in the cooking process to round out the distinct flavor. Bun bo is served with cylindrical rice noodles (bun), slices of thinly sliced beef and boiled ham hocks or boiled pig's foot. After the broth is laddled on top of the noodles and meats, the following toppings are added: finely chopped cilantro, sliced onions and diced green onions. In Central Vietnam, one only adds persicaria odorata (rau răm) and a 'squeeze' of lime juice to the dish. Elsewhere, people add slced red cabbage, sliced banana blossom, basil and bean sprouts to it. Courtesy of @cooking.with.yen So my plan today was to bake some red velvet cupcakes and make them look fantastic and post the photo but my buttercream was an epic fail 😭... Never baking again 😐 So what do I crave when I'm upset? Fried stuff! So I rummaged through my freezer and found some pork and crab spring rolls I made awhile back and fried them up. I'm happy now 😄
