Try this for your next breakfast! A good morning breakfast 🥣 consists of a well balanced meal that will energize you for the day. No excuse for running late because it only took me 3 minutes to make. In the banana peanut butter smoothie bowl we have a total of 545 calories. You can adapt the portion size to your calorie needs. Also you can prepare it the night before, which I do ! ( just add granola in the morning). . . .
Ingredients include almond milk, banana, peanut butter, protein powder and ice blended in the #vitamix 🍌🥜🥛. All topped with granola. There is a nice mixture of carbohydrates, fats and proteins. Totals include 25.5 g fat, 60 g carbohydrates and 27.5 g protein. This is a nice well balanced breakfast to get you through the morning 😁😁😁. Stay away from the donuts, add tons of nutrients and try this super easy smoothie!
This Buffalo Chicken and Broccoli Bowl is fast, easy and flavorful. Chicken and broccoli in a buffalo sauce can be served with a range of rice and rice alternatives too!
Buffalo Chicken and Broccoli
900g boneless skinless chicken thigh, cut into bite sized piece
900g of broccoli, cut into small to medium florets* (we used two crowns)
1 tablespoon oil (for the pan, optional)
¼ cup hot sauce (we used Frank's Red Hot)
2 Tablespoons butter
1. Heat a skillet or saute pan that has a lid over medium high heat. Add oil if using, and when hot add chicken. Season with just a little salt. allow to cook on one side until browned, then turn and brown the other side.
2. Cook until no longer pink, 4-5 minutes per side.When chicken is cooked, add broccoli to the pan and cover. Allow to steam until tender 5-10 minutes. You can give the pan a stir a few times if you want to keep the chicken from browning too much. Broccoli is done when easily pierced with a knife and still bright green.
3. Meanwhile, prepare the buffalo sauce. Melt 2 tablespoons of butter with the hot sauce and whisk to combine. Pour the sauce over the chicken and broccoli, toss to coat everything in the sauce.
Serve over cauliflower rice or regular rice.
NOTES * Make sure the broccoli florets are not too large and are of even size. This will allow them to cook faster and also make sure that they are all done at the same time.

Can we talk about these Brussels sprouts please? I’m not at all embarrassed to admit I only recently found out about PURPLE Brussels. I’ve been eating Brussels sprouts for years and the other day while I was doing my shopping, there they were, sitting directly next to the sprouts I normally buy. Once I saw these purple beauties, I knew my life had changed forever. (A bit of an overstatement but if you couldn’t tell, I’m super into these.) Cook them however you like, they’re delicious roasted with a bit of olive oil, garlic, and sea salt. Also, did you know it’s “Brussels sprout” not “Brussel sprout”? Fun fact for you on this lovely Tuesday evening! 💜

On Sunday I roasted some veggies and gilled some chicken, then tonight all I had to do was sauté some cauli rice & assemble this bowl. Boom, yuuuum.
- Roasted carrots and delicata squash (tossed in olive oil, salt and pepper then roasted at 400 degrees for 5 minutes), grilled chicken breast, sautéed cauliflower rice (in salt and pepper), green onions, sprouts and everything bagel seasoning.
Wenn es manchmal einfach richtig schnell gehen muss und trotzdem gesund sein soll...einfach Kichererbsen und Rosenkohl gut gewürzt in die Pfanne. 🌱 Wir lieben Rosenkohl. ☝🏻 Es muss nicht immer aufwendig sein um gut zu schmecken.👍🏻 (📸= @essensdurst)
