Chicken and Waffles 😱⠀
I'll be honest, the first time I heard about this I thought, OH MY, what a heck is this??? ⠀
It sounded on of the most odd combination ever, something that is difficult to understand from an European prospective. ⠀
📚 Intrigued by it, I did a small research and found out that Chicken and Waffles is actually a very old tradition originated in the Pennsylvania Dutch Country, the southeastern part of Pennsylvania that populated by German speaking immigrants. Curious enough, the term "Dutch" does not refer to the people of the Netherlands.⠀
🗞 According to Wikipedia, in the early 1800s, hotels and resorts outside Philadelphia served waffles with fried catfish. Such establishments also served other dishes like fried chicken, which gradually became the meat of choice due to catfish's limited, seasonal availability. Waffles served with chicken and gravy were noted as a common Sunday dish among the Pennsylvania Dutch by the 1860s.⠀
🍽 It's needless to say that it is not your usual healthy Sunday brunch and considering the usual US portion size, it's probably a good idea to share it with plenty of friends! ⠀

CACAO POD - Just another day walking through the rainforest 🚶🏿♀️ and we found some cacao trees. They are actually quite common on the island.
Each cacao pod contains between 20-50 beans. The beans are fermented, dried then used to make chocolate and other products. It takes around 400 dried beans to make 1 lb of chocolate 💚🍫
Raw cacao is one of the highest sources of antioxidants and magnesium. It has 20 times the antioxidants of blueberries 💚🍫
I eat vegan dark chocolate with a minimum of 70% cocoa...in moderation 😁. I'm quite sensitive to the stimulating effects so I really have to be careful. Not as nutrient dense as raw cacao but still has lots of nutritional value, and tastes good! 💚🍫

Here’s some footage of our last day in Delhi. When we took a bicycle rickshaw and the driver couldn’t go any further and started walking (maybe I was too heavy 🤔) I decided to take the wheel 💪🏼. Because I like to move haha. This was a lot of fun and people were really suprised. They even came on the street to take selfies 😆

So about that half marathon....
Eryk and I have, um let's say... changed our deadline. We originally planned to do a half marathon at the end of March, with a weekly schedule keeping us on track and prepared. But then a cyclone hit, and a heat wave and then of course a million excuses. I don't know why we started giving this whole idea less care but sometimes life just gets in the way.
But instead of giving up altogether we are simply going to readjust and move forward. I hate running, but my cardio is terrible and it's something I want to improve on, so starting tomorrow we're back at it 🏃🏼♀️

A lot of time has been spent in the market buying and sampling the local produce. It still amazes me how much fruit is available here. You can walk down any street and see papayas, guavas mangoes.. and so much more 🍊🍋🍌🍍🍈
There is a lot of potential to live a healthy life in St Lucia. The organic produce, the sunshine, sense of community and more relaxed way of life. St Lucia is a poor country but there is still so much good about being here 💛
And yes, they do sell baby chicks at the market for $1. The man in the video laughed at me when I asked if some people keep them as pets, no he said just for food 🐣🐤🐥 😔

One of my favorite parts of traveling is finding a local, old-school gym and training there during my trip. Training is a positive part of my life no matter where I am, and for some it may feel like a burden on vacation (in which there is NO shame in skipping if you choose to), but for me, this is part of the fun. I guess you could call me a party animal.💁🏻♀️
But really, I meet the best people and have some great workouts while I’m traveling, and this trip has been no different.

It’s been one adventure after another here in Costa Rica and I’m thrilled to be spending it with such a phenomenal group of people. ❤️ In between workouts and eating, we ziplined through the canopies of Costa Rica together, catching some thrilling views- can you say adrenaline?! ⛰🌴🐒 Today, after leading a morning workout, I’ll be whipping up a healthy lunch with the whole group, hopefully giving them some useful tips and recipes to use at home!
