Presently, it's only available in Canada. “At the beginning, I thought our audience would be mostly vegans, but what I’ve realized is that a lot of people are just looking to try new things, especially high-quality alternative, premium, or gourmet food products,” says the chef behind dairy-free Canadian brand Nuts for Cheese.

Ripe avocados, mashed with a fork.
Cherry tomatoes quartered
Red onion, finely diced.
Fresh lemon juice, 1 Lemon for 2 large avocados.
Fresh coriander, leaves and stems, very finely chopped.
Spring onions, chunky chopped.
Malden Sea salt flakes.
Ground black pepper.
Optional ingredients: finely chopped garlic - I don’t use it.
Fresh chillies, finely chopped - I use that.
Sploosh of extra Virgin olive oil, I sometimes do and I sometimes don’t.
Mash (peeled) avocados with a fork, leave some chunks. Immediately add lemon juice and mix well. Add tomatoes, onions spring onions, coriander, chillies and season. Mix well. Add garlic and olive oil if using. Mix. Check seasoning.
Put in bowl, sprinkle with spring onions and/or finely chopped chillies.

One of the best parts of being home from vacation is definitely being back in the kitchen and cooking my own meals. Today I'm brunching on this one pan meal - russets, broccoli, tomatoes, and pasture raised eggs all topped with a sprinkle of cheddar.
Shaking it up this morning with a Shakshuka • Subtly spiced with paprika and smoked chilli flakes and topped with a handful of fresh basil • A little change is good sometimes

HOMEMADE VEGAN LASAGNE 🙌🏼
Ever since my lasagne at Christmas I haven't been able to stop thinking about making my own lasagne! Mums lasagne was my favourite ever, pre-vegan, and I'm so glad I finally tried it!
Mine has layers of pasta sheets, grilled zucchini (thanks mum!), homemade tomato sauce (diced onion, mushroom, vine tomatoes, tomato paste and dried herbs), and @minimalistbaker's cashew alfredo cheese sauce! Baked at 170C for 50-55 mins (last 10-15 with the foil off) and it is PERF. I want to eat it always. Favourite comfort meal these days 💖 (I've actually made one more since this photo but used tinned tomato and it just wasn't quite the same 😌)
