Creamed eggs! Perfect recipe for a tasty breakfast. This is such a great comfort food that is so easy for anyone to make! My grandma and mom used to make this for me when I was younger, but I've added my own twist to it. This recipe makes a single serving but you can always go back and double or triple the ingredients as needed!
2 hard boiled eggs
1 piece of bread (toasted) *I used sourdough but you can use whatever you like!*
1 tablespoon of butter
1 tablespoon of flour
1/2 cup almond milk (you can also use regular milk)
Handful of spinach
1/2 of a Roma tomato (diced)
1 teaspoon garlic powder
1teaspoon smoked paprika
1/2 tablespoon green onions (chopped)
Salt and pepper to taste
Make a roux by melting 1tbsp butter over medium heat in a saucepan and whisking in 1tbsp flour until all lumps are gone. When mixture is smooth add milk and whisk, until sauce is smooth and gets thick and creamy. If the sauce is too thick, add milk in small amounts until desired thickness is reached. The consistency of the sauce should match the video. Add 1tsp garlic powder and 1/2 tsp of smoked paprika. (Save the rest of the paprika for later.) Add Salt and pepper to taste. Remove sauce from heat.
Chop up boiled eggs into thick peices, making sure to save and set aside half the yolk of one egg. Mix the eggs in with the sauce.
Place raw spinach evenly over toast. Next sprinkle most of the diced tomatoes evenly over the spinach. Place creamed egg mixture on top and sprinkle the remaining tomatoes and green onions over. Next, crumble the remaining egg yolk over and garnish with remaining smoked paprika. **this is a great recipe that has room for alot of diversity. If you wanna keep it basic use only salt and pepper to season the sauce. You can also add whatever topping you want like bacon bits and shredded parmesan. ❗Recipe for the houmous :
3 smallish peeled beets, raw
1 can organic chickpeas, drained
1 tbsp tahini
2 garlic cloves
4 tbsp extra virgin olive oil
1 tsp smoked paprika (I usually add a bit more than this but I love smoked paprika)
1 tsp cumin
1/4 tsp cayenne pepper
Sea salt and black pepper
Juice of one lemon
Blend all ingredients together until well combined.
Add a little water at a time until smooth and creamy.
Taste and adjust as needed. Keeps well for 2-3 days in the fridge.

A toast-filled Thursday to start my day🍞 I got pretty anxious for my avocado so I cut into it and it wasn't really ripe yet; that's why I couldn't mash it...but honestly still eating it🤷🏽♀️
