The sirloin flap, also called "flap steak” or “flap meat, is derived from the bottom sirloin butt. It has striated muscles similar to skirt steak, and robust flavor like strip steak, but it's chewy. It's usually cut into bavette steaks, which are economical steaks such as those that are offered at restaurants as a bar steak. Flap steaks cut from Wagyu beef are very tender and a good alternative to prime New York strip steaks because they will be less expensive, yet just as great of an experience.
