Phase 3 of project Sourdough Bread: the autolyse. This is where the flour soaks up the liquids and becomes a dough. After resting for a couple of hours, then adding the dissolved Salt, the dough will now rest and get folded every 30min.

What an amazing day of learning with @chremley ! I feel so much more confident with sourdough and it was great to learn from someone who is such a purist. Just flour, water and salt and we made the most consistent, flavourful loaves! I love it. I even took dough home to bake in my oven and it STILL WORKED! Even though I used a flan dish covered with a pasta pot instead of cast iron 😂 And the Thai soup for lunch was the icing on the cake. This foggy, soggy weather has me craving some good sourdough bread. I haven’t made any in years. I, of course, refuse to follow a recipe because, in my mind, they are mere guidelines. 😉

Tudo maravilhoso, muitos ensinamentos, mas o desafio mesmo foi passear com uma massa viva, fermentando e crescendo no calor carioca, subir a serra e trazê-la para assar na minha @apaneladeferro em casa!
Apesar dos pesares, e das altas fermentações um tanto descontroladas no quesito temperatura/tempo/sacolejo do transporte, aí está o fruto do nosso curso de hoje. Bonitão, bem crec crec e douradinho do jeito que Maillard gosta!
