One of the amazing appetisers at Audace that will be available for a one night only dinner pairing with Código 1530.
The confit egg yolk was deliciously gooey with small bits of sea urchin, contrast with flavours of crisp radish and acchillée. This is paired with Código 1530's Blanco Tequila and a La Paloma cocktail.
The one-night-only event is on February 1st, 6.30pm, and the five-course dinner menu is just $128++ per person. Each dish will be paired with a taster tequila shot from the Codigo 1530 range (Blanco, Reposado, Rosa and Añejo) and a Codigo 1530 cocktail.

This TOTOROLL from @dairyandcream hits all the right spots with the fluffliest matcha sponge encasing intense matcha creme (with matcha powder sourced directly from Kyoto), fresh chantilly and a dash of kokuto (black sugar) sauce, enlivening that authentic bittersweetness while adding depths to the matcha flavour to attain that perfect balance in a matcha roll. Mustard & Sage Pork Collar & Two Sides
The pork collar were cooked to tenderness and easy to chew, with the mustard & sage sauce complimenting well in enhancing the taste of the meat! The two sides that came along with it, baked baby potatoes and tomatoes with peas, were also spectacular, with the former being lightly spiced to get that extra flavour and having a crisp skin, while the tomatoes and peas were addictive to have!

I use Swiss Meringue Buttercream for all my floral piping. All you need is frosting, a flower nail, a square of parchment, a piping bag with piping tip #104, and lots of practice!
