It's lunch time! Wishing for warmer weather so I can enjoy this berry and hazelnut salad again #eatinseason. Nothing like mixing sweet and salty, crisp and crunchy for the perfect salad. If you’re somewhere warm, enjoy this for me and tag your creations #eatcomplete. Best part about brain food? It’s delicious.
1/3 cup hazelnuts
1/4 cup extra-virgin olive oil
Juice and finely grated zest of 1 lemon
2 tablespoons plain kefir
1 teaspoon honey
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/2 pound salad greens, such as mesclun, baby kale, or spinach
4 carrots, peeled and thinly sliced
2 cups radishes, trimmed and thinly sliced
1 pint berries such as raspberries or blueberries
Preheat the oven or toaster oven to 350°F.
Spread out the hazelnuts in a single layer on a rimmed baking sheet. Toast in the oven until the skins split and the nuts turn a deep golden brown, 10 to 12 minutes. While still hot, rub the hazelnuts in a clean kitchen towel to remove the skins (some bits of skin will remain). Cool for 5 minutes, then chop.
Combine the oil, lemon zest and lemon juice, kefir, honey, salt, and pepper in a small bowl and whisk until smooth.
Divide the salad greens among four plates. Top with the carrots, radishes, and berries and drizzle with the dressing. Garnish with the chopped hazelnuts and serve immediately.

I posted this Asian Chicken Lettuce Wraps recipe ( #glutenfree#paleo) on Downshiftology two years ago, but the photos were, umm, not the best. I also wanted to add a video to show you just how easy they are to make (as in, seriously easy). You’ll have to excuse my raspy voice in the video though. My vocal chords seem to be taking a while to heal from when I had bronchitis in Dec. And let’s be honest, I probably talk a little too much. 😂 🙊 But Thanks SO much for all your natural remedy responses on stories. //WEEKENDS ARE FOR PANCAKES// Don’t you agree?!?! I do but I like to eat them any day of the week too! It’s been ages since I posted a pancake pic! 1 banana, 2 eggs, 1/2 scoop of choc protein powder and 1/2 scoop of rice or buckwheat flour. Mix it all up, fry it on the pan and slather with peanut butter, a drizzle of honey and some sliced apples, with a sprinkle of chia seeds!
It seems hard, but damn it’s too easy!

Vegan Orange “Chicken” by @Alexafuelednaturally 💛⠀ Recipe⠀
1 Cauliflower, About 3-4 cups⠀
1/2 cup purple cabbage, diced⠀
1/2 onion, diced⠀
1/2 cup orange juice (fresh if possible)⠀
2 tbsp soy sauce⠀
1 tbsp coconut aminos⠀
1 tbsp maple syrup⠀
1 tbsp coconut vinegar or rice vinegar⠀
1 clove garlic, crushed⠀
1 tsp cornstarch⠀
4 tbsp water⠀
Cut cauliflower into florets.⠀
Sauté deiced onions for two minutes on medium to high heat with water and season with salt and pepper to taste⠀
Add cauliflower to the onions and cook for 10 minutes. Add 4 tbsp of water at a time throughout process. Each time the water evaporates and the cauliflower begins to stick the the pan, add more water & cover with a lid to let the cauliflower steam.⠀
In a small bowl combine cornstarch and 4 tbsp water, mix and set aside.⠀
Put the orange juice, soy sauce, coconut aminos, maple syrup, vinegar and crushed garlic in a small sauce pan on medium heat and whisk together and let heat up for 1 minute. Add in cornstarch and water mixture and heat until bubbling and starting to thicken, cook for 5 minutes, then turn off heat.⠀
Add chopped purple cabbage to the cauliflower & onion mixture and cook for a for two minutes.⠀
Pour sauce over the cauliflower, stir making sure all the cauliflower florets are fully coated and let mixture heat up for 3 minutes are medium to low heat.⠀

Wild caught salmon seasoned with @primalpalate new bae seasoning. Pan seared in olive oil on medium heat for 4 mins on each side. Purple potatoes seasoned with primal palates meat and potato seasoning. Microwave for 2 mins in a bowl of water, drain and season. Cook in skillet until browned. After removing the potatoes I added the green beans into the same pan and cooked for 2 mins. Finished with sliced tomato, cucumber, and avocado. Laid on top of a bed of spinach and mixed greens drizzled in olive oil and lime juice. Sprinkled with hemp hearts and red chili flakes. Happy Friday everyone!
