What’s your favorite here? Fruit of the Caribbean this morning. Carambola also known as 5 finger or star fruit and a sweet and creamy star apple or Cayemite. There are also mangos and pasiflore, which is a sweet passion fruit variety.
It's rare of me to find passion fruit at the store, so when I spotted some last week I was so ready to stake my claim. 😛And it smelled insanely good even before I cut into it. Was so good over these overnight oats and just a lovely compliment to the blueberries. ❤️

Realised it’s been ages🙀 since I’ve made a smoothie bowl, so fixed that😻 with this mornings magical✨💫 Açaì bowl... I really wanted 🥑toast🤦🏼♀️ but refuse to go grocery shopping before Melbourne on Sunday but also realised my body doesn’t respond well to full fruit 🍇🍎🍌 meals anymore...as much as I love them! #vegan

After yesterday’s post I know allot of you love this combo😉 So have you tried my Mango and Passion fruit Slice yet? It’s Easy to make and full of all the tropical vibes, recipe below✌️🌴☀️ .

150g Almonds - I use roasted
50g desiccated coconut
12 Medjool dates .
450g raw cashews soaked overnight
1/2 C coconut yogurt
3/4 C coconut milk
225ml rice malt syrup
2 Tsp pure vanilla extract
2 frozen mango cheeks
4-5 passion fruit .
Place all base ingredients into a processor and combine until mixture sticks between your fingers when pressed together.
Place into a tin lined with baking paper. I used a square tin,firmly press down.Place into freezer whilst you make the filling.
Rinse the cashews well and drain, pat dry.
Place all ingredients Except the mango and passion fruit..into a high speed blender and blend untill smooth and creamy. Pour half onto the base.
Puree the mango in a blender and gently combine into the filling that you poured onto the base..now add the rest of your filling and smooth over top.
Place into freezer untill frozen.Approx 6hrs.
Once frozen scoop out the passion fruit and place over the top.
Before eating..take out of freezer and let sit for approx 10 mins before slicing!
Kerp in an airtight container in the freezer
