4 hardboiled eggs, sliced
10 small red potatoes, cleaned and quartered
8 cups checked GG Romaine lettuce
Tuna steak or canned tuna (see note below)
3 tomatoes, cut into eighths
1 small red onion, sliced thinly
8 oz green beans
¼ cup black olives
½ cup lemon juice (2-3 lemons)
¾ cup extra virgin olive oil
1 medium shallot minced (you can also use purple onion)
1 Tbl fresh thyme chopped or 1 tsp dried thyme
2 Tbl fresh chopped basil or 2 tsp dried basil
¼ tsp dried oregano
1 tsp Dijon mustard
For the vinaigrette: whisk lemon juice, oil, shallot, thyme, basil, oregano and mustard together. Season with salt and pepper. Set aside.
For the salad: Bring potatoes and 4 quarts of water to a boil, add 1 tbl salt and cook until potatoes are tender, 5-8 minutes. Transfer potatoes to bowl and toss with ¼ cup of vinaigrette. Set aside.
Toss lettuce with ¼ cup vinaigrette and arrange on serving platter. In same bowl, break up tuna (if using canned) Add ½ cup of vinaigrette and stir to combine. Mound tuna in middle of lettuce. Toss tomatoes, red onion, 3 Tbl vinaigrette, salt and pepper together. Arrange in rows on salad.
In the same water that cooked potatoes, toss in green beans and cook until tender crisp 3-5 minutes. Drain beans and transfer to ice water for about 30 seconds. Dry them well. Toss with 3 Tbl vinaigrette.
Arrange green beans, olives and eggs on salad. Serve and enjoy!
Note: You can use a 7 oz tuna steak sliced into strips or 2 6oz cans of tuna packed in water or olive oil
Note 2: this recipe has a lot of steps but everything can be made in advance and served cold, just as good!

What's for Melava Malka? Baked pretzels are the perfect easy-to-prepare meal for a late Motzei Shabbos. Simply pick up a your favorite brand of soft baked pretzels and pop them in the microwave. Even better you can make home-made cheese pretzels by partially defrosting the pretzel, just enough to slice it in half, lay cheese over one half of the pretzel, and any other toppings (such as spinach); cover with the other half and microwave till the cheese melts.
