Going through my phone this morning and realized I never posted the finished product of our bone in Prime Rib! Delicious color, texture and consistency throughout! Cooked to 125 low and slow, sear outside for a minute or two! We didn't even eat this that day, it's in my freezer as we speak! Call it smoked belly or slab bacon, but it was a little hunk of “Hog Heaven” that my pals @buyranchdirect gave me to play with. I think it was cured and cold smoked ? I’ll ask, but it was SO good, I wonder if they have a big slab ?!... it would be amazing for a pile of Pork Belly Burnt Ends !
