Made a simple soup tonight - carrots and a little ginger for my not so happy stomach. Had a serve tonight and it was nice, still have another serve left for tomorrow as well. Also i've prepped the rest of the carrots and ginger so i can make some more soup when i feel like it.
I will admit i hate cooking and the time it takes but this was literally so easy and pretty quick too and my stomach wasn't complaining either. Prepping so you have less to do is definitely a winner too if you're anything like me with a lack of desire to cook. Meal prep is becoming my new best friend!
Loving that i'm ending the month with adding more healtier & nutritious foods into my diet, it's definitely something i plan on keeping up with, even if my gut is a bit messed up right now, i can still recognize that this is a another step in the right direction for me. 😊👍❤ P.s. I also had one of my Juice Plus complete shakes after the soup. Love knowing i get more fruit and vegetables in this way. I felt like something sweet but wanted it to be reasonably healthy too so I came up with this very simple, delicious, nutritious and filling dessert.
Cup of frozen mixed berries
Sachet of vanilla complete shake
1 tbsp of natural coconut yoghurt
1/4 cup oat milk
Blend together until smooth. Top with a sprinkling of cacao.
