½ butternut pumpkin, seeds removed,
thickly sliced 1 baby fennel,
quartered 4 baby beetroot, stems removed
60ml (1/4 cup) olive oil
Pilpel Herb Falafel
2 cups watercress
60g goat’s cheese (chèvre)
Pilpel Almond ⭐️ METHOD // 1. Preheat oven to 180ºC (160ºC fan). ⭐️ 2. Line a baking tray with baking paper. ⭐️ 3. Combine pumpkin, fennel and baby beetroots in a bowl with oil. Season generously then toss to coat. ⭐️ 4. Spread evenly onto the prepared tray and roast for 30-40 mins until soft. ⭐️ 5. Heat falafel according to packet instructions. ⭐️ 6.To arrange the salad, arrange watercress and roast vegetables onto a platter. ⭐️ 7. Top with falafel (crumble some of the falafel over the top for presentation). ⭐️ 8. Spoon small dollops of Beetroot Almond dip randomly over the top then crumble the chèvre over the top to serve.

"I pulled into a car park at about 12am just out of Port Fairy and set up looking across the bay toward the Port Fairy Lighthouse. I could see random spikes of lighting creeping closer and closer behind the lighthouse! Then...BAM (Insert sound effects)!! One hell of a big bolt exploded!
