Saying goodbye to our loved ones is the toughest part, saw off the little one yesterday until she again comes in summer. I seem to live from vacation to vacation in between is a blur!
I needed something to warm my heart and fill this empty home with some warmth. Dinner had to be simple and yet nourishing .This bowl with steamed rice,steamed veggies and some spicy pork could lift my spirits temporarily at least. I have realised that my memories with my loved ones our my most precious possession, nothing else matters.
I didn't make any of this. Just a new discovery that has become a new staple around my place is this cocoa and chia #GlutenFree granola that comes in bulk. Not really sure the manufacturer, but it's delicious and way better than candy bars! Here with vanilla coconut milk and bananas. #Vegan

Feeling satisfied and guilt free this morning. I got into cooking school nine months ago because I wanted to learn how to cook healthy food that tasted amazing. Here is one of the many examples I have found. Sweat oatmeal crepes, ricotta cashew cream and triple berry syrup. All of it is gluten free, dairy free and the only sugar is from 100% pure maple syrup. Add a cup of greens and I was feeling the love this morning. How I wish I had more of these raw #blissballs right now. They're the perfect snack because:
(1) they're convenient to grab-and-go when I'm in a rush, (2) they're SUPER easy to make #lazygirlproblems, and best of all...
(3) just ONE of these mini #energybites keeps me full because they're made with REAL, nutrient-dense ingredients
And while all of these are important to me, I need to capitalize on #3 because I tend to eat A LOT. I want something that can satiate me for a while, because otherwise I'll end up binging. When it comes to food, I like to eat MASSIVE quantities. Some may say I have a bottomless pit for a stomach. Quantity over quality, am I right? Well luckily, in this case I don't have to choose because it's a healthy option that I can have a LOT of—but don't need since one satisfies me plenty! Double win.

When we changed our eating habits,we were so bummed about the Sicilian food, no meat balls... no pasta with meat sauce.. no ARANCHINI!!! I mean our parents were in shock with the change, they didn't understand why?! But let me tell you! We have found a way to have our Sicilian dishes with a little twist! Which is totally fun and creative! These balls don't come too often! We have to really talk my mom into making them. Being that I can't have tomatoes was like telling a kid in a candy shop he can't have the candy! But I found a way with this vegan pesto! These aren't vegan but they are vegetarian and I'm not mad about it at all. Why?! Because our mother won't be around to make them forever! So we gotta enjoy her treats once in a while. Sumac Sweet Potato Egg Nests 🤤
Spiralize 1/2 a large sweet potato and toss with EVOO and 1 tsp sumac.
Divide into two piles (aka nests) and bake @ 350 for 15 mins.
While the nests are baking, cook two eggs however you’d like. I did one poached and one fried. ▫️You can also crack the eggs into the nests and bake them that way, but I prefer to cook them out of the oven.
Place the eggs on top of the nests.
Add 1/8 sliced avo to each nest and season with @traderjoes EBTB seasoning + @natierrasuperfoods pink salt + pepper flakes.

Recipe 👉 4 tbsp almond flour (30g) + 3 tbsp @quaker oats (20g) + 1/2 tsp baking powder + 3 tbsp @tropicanafr applesauce (50g) + 2 eggs + 1/3 cup @bjorgofficiel soy milk (80ml). Mix all the ingredients together with a whisk then cook on low heat with coconut oil. Top with peanut butter + @justebio coconut powder + @driscollsberry blueberries + raspberries and you’re all done!

Blend together, 1 frozen banana, 1 cup steamed and frozen zucchini, 1 tbsp paleo chocolate nut butter, 2 scoops @yoursuperfoods chocolate lovers functional powder (great taste thanks to cacao, coconut and lucuma! Plus high in magnesium, zinc and essential fatty acids- fitandwell15 for 15% off ), handful cashews + tsp chia seeds, 1 cup unsweetened almond milk + ice. Spread 1 tbsp chocolate paleo nut butter on the bottom of a jar, pour about half of smoothie blend on top. Return blender to stand and add more banana and almond milk. Pour in jar.
