It has been a busy week so far! Days 15-17 were good, we made barbecue meatloaf and mashed sweet potatoes, a crockpot chicken dish, and then cauliflower pizza which we hadn't had in a while! All in all we feel pretty good and are starting to get back into a good workout routine. Today we grocery shopped and meal prepped (Tim gets credit for this part) and then had lettuce wrap burgers with roasted parsnip fries (o.m.g. Looking through old pics... It’s interesting when you think back to who you used to be. I always think it’s incredible how much you can grow in such a short amount of time. I think so deeply sometimes that I can feel my own growth from the day prior…anyone else feel that?!? Finally truly accepting who I was back then – she pushed me to be who I am now. The journey…it’s all part of what shapes us so right now I’m feeling #thankfulAF
The second snow day this week calls for the coziest red lentil ragu! Filled it with plenty of carrots, parsnips, and spinach, along with some red lentils😋 Nothing better than cozying up with a bowl of stew while there’s snow on the ground outside! Recipe is from @nytimes but I added parsnips and spinach for extra nutrients! Enjoy your Thursday💋💋

I started my fitness journey to help with my sleep and stress. Now, if I'm sleepless or have had a bad day at work, I can make the decision to do something positive for myself because of this change. Overall, I am dealing much better with life. I feel stronger on the inside and that makes me look forward to whatever happens next. If I had not reached out or if I didn't felt comfortable enough to really open up, I would not be this far. Turns out I’m stronger than I thought. "⠀

I think I’m as passionate about leftovers as Kyson is about guacamole. The kid eats it plain by the spoonfuls (or messy handfuls). I almost always have to give him a sink bath after he eats it. But he doesn’t like plain avocado. 🤷🏼♀️Fajita steak + veggies, pineapple & guac. #kidlunch

This chicken was so good. It was a knock off healthier version of the Chick-fil-A chicken! This whole meal was done in my Air Fryer. If you're hungry and feeling blah on your "diet", you should stop dieting and try my lifestyle. Needed to use up some produce before it went bad so threw together chopped bell peppers, brussel sprouts, and onion with some Cajun seasoned tilapia and black pepper and sea salt quinoa. Took 10 minutes! #dinner#glutenfree#fuelyourbody
Roasted delicata squash toast 😋 In other words, the best toast combination EVER. Made with @chamberscreekkitchen sprouted quinoa bread, roasted delicata squash, and a homemade coconut cream drizzle made with full-fat canned coconut milk, @nutiva Coconut Manna, @vitalproteins Coconut Collagen Creamer, and pure vanilla beans, this is by far my favorite combo right now. Even though I’m not sick anymore, I’ve still been craving toast like CRAZY! Anyone else? What are your favorite toast toppings?
I HAVE to give a shout out to @sweetgreen at the end of this week. I went in to pick up my salad that I preordered for 12:30. Line out the door. People want their veggies! (Proud momma) and I’m not complaining that it took over 20 minutes to get my preordered meal. Sweet green took what seamed to be a disaster and fixed it with kindness. I love good service and the @harvard_square sweet green face all of us waiting for our salads a free drink while we waited! Sure, I’ll always take a free iced chai tea! Thank god for good people.

Parmesan Herb Baked Salmon
Preheat oven to 350 and generously coat salmon with onion powder + dill + thyme + parsley + parmesan + lemon juice. Bake for 8 minutes. I served mine over @eatbanza shells with sauteed bok choy + lemon + a little more parm. BOOM 🙌🏽
