Easy AF popover recipe
2 1/2 cups whole milk, room temperature (2% or low fat milk will work as well.) 2 1/2 cups all purpose flour (Apparently bread flour's
higher protein content will give you a higher rise and crispier crust. However, I used @bobsredmill all purpose baking flour and was pretty happy with the results.) 1 teaspoon coarse salt
2 teaspoons vanilla bean extract (optional)
6 large eggs, room temperature
Can spray oil or unsalted butter for popover pan
Adjust oven rack and place popover pan to the lower middle level. Preheat oven to 425 F degrees and let stand for at least 15 minutes.
Meanwhile, whisk together milk, flour, vanilla extract and salt. Whisk in eggs. (Do not over mix - It should be a little lumpy like pancake mixture.) Carefully remove popover pan from oven, then quickly spray with cooking oil (I used coconut oil) or butter cups generously with butter. Fill each cup 3/4 with batter. Bake for 20 minutes without opening the oven door.
Reduce oven temperature to 325 F degrees. Bake until golden brown, about 25 minutes longer. Turn out popovers as soon as possible and poke a small hole in each to release the steam. The popovers hold up surprisingly well and can be reheated just before serving. Enjoy them as is, or covered in good old Canadian maple syrup stuffed with sweet fillings!
If you have leftovers, place in an air tight freezer bag, and freeze for up to 3 months. Reheat in a hot toaster over before server. Enjoy!

We are at Cole St Brewery in #enumclaw tonight 2/24 from 4-8pm.
Ah.... Joon in #munich#germany 🇩🇪 is a nice #cafe place to take a #brunch tasty break in. Their #yogurt and #oat bowls are delish, as is their crunchy AF #bacon 🥓, as well as their #freshpressed juice 🤤 Unfortunatey their eggs #avocado 🥑 dish wasn't anything special, nor were the #pancakes 🥞 and we waited quite a while for our meal to come out. Food: 6.5/10, Overall 7/10
