Happy weekend everyone!
I made myself an açaí bowl in the first time in what feels like forever, and it was 🤤
1 packet unsweetened @sambazon frozen açaí
1 cup frozen blueberries
1 frozen banana
1 cup @c2ococonutwater plain coconut water ice cubes
1 serving @vitalproteins collagen peptides
1 tsp raw honey
1/4 cup almond milk
1/3 cup @pillarsyogurt mixed berry drinkable Greek yogurt
👉🏼Topped with banana coins + @purely_elizabeth original granola + mango + blueberries + @traderjoes coconut chips + unsweetened coconut shred

The original recipe for this chicken is from a lady in my Facebook group. It’s a group I’ve had for a few years and it’s made of people I went to high school with, friends & family. I tweaked her recipe to fit what I was looking for.

6 boneless skinless chicken thighs
1/4 cup olive oil
2 TBSP finely chopped cilantro
2 TBSP lemon juice
3-4 cloves of Minced up Garlic
1-1/2 tsp smoked paprika
1/2 tsp Salt
1/4 tsp Cayenne Pepper
2 TBSP coconut milk
1 TBSP arrowroot powder (or more)

Mix all the ingredients in a bowl (except the coconut milk & arrowroot)
Cube up the chicken and mix into the marinade. Marinate either over night or at least 6-8 hours. Put the chicken and all the liquid into a pan at medium high heat. Stir chicken around as needed. When meat is almost done add the coconut milk, let it come to a simmer. Push some the meat to the side to make room to stir in the arrowroot. Slowly add in some arrowroot stirring quickly to avoid lumps. Let it simmer until the sauce is to your desired consistency. (More arrowroot if needed.). # # # # #
