🌳easy salmon bean salad

☃️Lunch: salmon bean salad w/lettuce leaves and chopped broccoli, roasted brussels sprouts, roasted broccoli (one w/almond butter)
Thank goodness I went grocery shopping yesterday bc we woke to snow this morning, and it was frigid all day! This refreshing yet hearty salmon bean salad couldn’t be easier to make! You can serve with crackers, vegetables (like celery, carrots, cucumber), bread, salad, cheese, or whatever you fancy! What I like to do is set aside baby’s portion and season the rest of the salad with salt and pepper for the hubby and I
• 1 (6oz.) can of salmon (I used Wild Alaskan packed in water)
• 15 oz can of Great Northern beans, rinsed and drained (or any other beans. I used no sodium)
• 1 avocado, chopped
• 1/4 cup chopped fresh cilantro (or parsley, if preferred)
• zest of 1/2 lemon
• 1/4 tsp freshly ground black pepper
•3 Tbs chopped red onion(see note)
📌Drain salmon and transfer to a bowl. Add beans and gently combine. Add the rest of the ingredients and mix to combine. Serve chilled. Best if made at least a couple of hours before serving
📌note: I sautéed the onion for 1-2 minutes to reduce the onion-y flavor for the baby. You can use raw if you desire or leave out all together

Have you tried celeriac? I haven't used it much in the last couple of years, but I picked one up on a yellow sticker (reduced in price) the other day and remembered how much I liked it. I love the idea of adding all kinds of veg to our meals, and try whenever I can to get my 10 year old, fruit and veggie hating son to ingest more than a couple of slices of cooked carrot per week 😣. Celeriac is great steamed and mashed into potato which is what I used to top our cottage pie at the weekend. My tip is to steam or boil it until it is just tender, and allow it too cool slightly so the steam comes away before mashing, as it can be a little watery if overcooked.

Since my sister told me some of the wonderful health benefits of barley, I've tried to incorporate it into our meals. Last week I added it to our cottage pie, and today I made a milk pudding with barley, rice, milk, vanilla, and coconut sugar. My youngest only ate a small amount as he wasn't keen on the al dente texture, but my oldest and myself really enjoyed it. I used milk so for slimmingworld it would be synned, but I only had a small amount and am glad to try something different.
I'll definitely be using this ancient grain in lots of my meals from now on. It's inexpensive, lower in calories and higher in fibre than brown rice, and packed full of antioxidants and essential minerals, plus it tastes great.

We're loving this Chicken Pot Pie with Cheddar Biscuit Crust from ( #📷 @heygrillhey)
It's the best way to punch up a classic family meal. Part traditional pot pie, and part golden cheesy biscuit, this is comfort food like you’ve never had it before. Bonus: this whole meal is a one pot wonder! It goes from stove to grill or oven in the same cast iron skillet.
▪️1 Tablespoon olive oil
▪️1 pound boneless skinless chicken thighs
▪️1 cup carrots chopped
▪️1 cup celery stalks chopped
▪️1 medium yellow onion minced
▪️3 cloves garlic minced
▪️4 Tablespoons butter
▪️4 Tablespoons all-purpose flour
▪️4 cups chicken stock
▪️1 cup frozen peas thawed
▪️2 Tablespoons fresh parsley chopped
▪️2 teaspoons salt
▪️1 teaspoon black pepper
🔹Cheddar Biscuit Crust
▪️1 3/4 cups all-purpose flour
▪️1 Tablespoon plus 2 teaspoons baking powder
▪️2 teaspoons sugar
▪️1/2 teaspoon salt
▪️3 Tablespoons shortening
▪️4 Tablespoons cold unsalted butter cut into 1/4 inch pieces
▪️1 1/2 cups sharp cheddar shredded
▪️3/4 cup whole milk
🔹For the garlic butter topping
▪️4 Tablespoons unsalted butter melted
▪️1 Tablespoon garlic salt
▪️1 Tablespoon fresh parsley chopped

BIG SUCCESS!!! Winner winner turkey dinner! 😂🦃Both kids ate their entire plates and had seconds...Maisie had seconds of the turkey meatballs and Alfie has seconds of the polenta fries!! Amazing! Usually one puts up a protest! 😂
I made the meatballs slightly differently this time around as I made them first and THEN coated them in panko breadcrumbs which provided a bit of crunch (which Maisie commented on and really liked so will definitely be doing it again like this! 🤗) for the meatballs I used the following: • Turkey mince
• 1 egg
• 1 1/2 tsp smoked paprika
• 1 1/2 tsp dried oregano
• 1 onion - finely diced
• 1 carrot - grated
• 2 cloves of garlic - crushed 🍴I sweated the onion and carrot off in a frying pan first and then added the garlic. Cooked until softened & then left to cool. 🍴Then I mixed the onion mix with the rest of the ingredients and seasoned. 🍴Roll into balls & then roll the balls into breadcrumbs. Place onto a tray lined with greaseproof paper & pop into the fridge to firm up or until ready to cook.
You can then either fry them in a little oil or pop into the oven for 20mins or until cooked through, (will depend on the size of your meatballs!) turning half way. I tried both versions! I then popped them onto a skewer because everything tastes better on a skewer or lollipop 🍭 as the kids called it!! I served these with polenta fries!! Another @lizzieloveshealthy recipe - Loving her book! 🙌🏻 I was so impressed with these! Confession time I think I’ve only cooked polenta once!!! 🙈 but so glad I tried again these are easy AND tasty AND crispy AND the kids loved them! You could add parmesan to these as well but obviously keeping things dairy free for Maisie! Really good, I highly recommend if you make anything this week you try this meal out with your kids!! I had a lovely morning at @applegarthfarm today for my friends babyshower! Delicious brunch, yummy coffee (needed after Alfie’s rude early awakening!) & a really good farm shop! (See stories!) Oily fish like salmon is a great source of Omega-3 fatty acids, which help to keep our heart lovely and healthy. It’s really important we aim for two portions of fish a week, one of which oily like salmon, mackerel or sardines. It’s also a great portion of protein so team it up with veggies and a portion of carbs.

🍋🍃Who fancies Tender lemony spinach chicken with a creamy garlicky sauce all wrapped up in a flaky pastry parcel?!? 🙋🏻♂️🙋🏼♂️🙋🏻♂️🙋♀️we do!!. • 4 chicken breasts
• Lighter soft cheese with garlic & herbs
• Couple handfuls of spinach
• Half a lemon, zested • 2 packs ready rolled lighter puff pastry (dependant on chicken size you might need less)
•Cut pastry sheets in 2 widthways.• Slit the chicken breasts and stuff with soft cheese and place to left of pastry strip. • Season, sprinkle some lemon zest, and top with spinach. • Fold the pastry strip over the chicken and press with a fork to seal. •Trim each parcel and brush with milk and bake for 30 mins in a 190oC fan oven. • Steam some green veg and use the remaining lemon juice to liven them up before serving 😋 >
💕There’s so much information about diet on instagram some good some bad. One particular diet doesn’t suit everyone. It’s always important to do what’s right for your body. A balanced diet that contains lots of fruit and veggies.
The one thing I think we all should do is make food from scratch and don’t rely on package food. Although I like sweet treats I only ever eat homemade.
