Dinner: Posh toast
Heat oven to 220 degree (200 fan bake)
Sauté a leek and set aside
Sauté punnet of mushrooms
Cut a sheet of flakey pastry into four parts score the edges.
Stack the pastry with the veges- cook for 8-10mins.
Add creamy blue cheese and walnuts.
Pop back in the oven and cook a little longer. When it looks delicious is when it's done!
Inspired by Nadia Lim which is now one of my quick and easy meals.
Serve with fresh salad. Corn is still super yum at the mo...so we had this too.

Roasted vege stack
With lashings of fresh goodness
Roast eggplant and potato slices
Topped with rocket (or baby spinach)
Laced with pesto and mayo (I serve this in the side)
TIP: As not everyone in my household enjoys eggplant. I create a mound of eggplant in the centre of the plate and then layer the roast potatoes around it.
Top with fresh veges.
I am a big believer in "re-offering" and not making people eat stuff they don't enjoy.
So I make it easy for them to select what they like to eat

Not when I completed my course .... but when my first group of students finished their course

Practice things that are life enhancing. Meditate, eat vibrantly, love unconditionally, play, dance, give thanks to ALL of existence and always be in full gratitude. There's so much to be thankful for. You will feel better & better as you release some toxic habits such as: consuming bad food, unnecessary shopping, judging, complaining, gossiping, over indulgence etc. #love#enhancelife#meditate#oneness
