We are still eating from our garden at our house! Utah is a great place to grow squash. We grew just about every variety at my home and it’s been a goal to learn to use each item in as many ways possible!
Here’s a quick easy recipe for a treat or side item to use with your acorn squash! I personally ate mine as a side with Gorgonzola burgers tonight... yum.
Parmesan Garlic Acorn Squash- Grab an acorn squash, poke it in 3 places with a fork and place in the microwave for 20 seconds (this helps soften so you can actually slice it). Cut both the top and bottom off and slice directly in the middle and scoop out the seeds. Slice along, so your squash looks as pictured. Place in a bowl with: minced garlic, olive oil, Parmesan cheese, salt and pepper! For the amounts.. choose what works beat for your families taste, we are all different! Bake at 400 degrees for 25 minutes and voila!
I really think they taste just like chips and use them in place of foods I’d love chips with! Yummy!
They say you learn something new every day. Today, I learned a lot, but one thing that stood out is that it is really hard to take an aesthetically pleasing picture of soup🍲🤨This semester, my routine has been: Internship all day, go to the gym, come home ravenously hungry wanting to eat everything in sight. I was never a big “soup” person, but this winter soup has been my meal prepping STAPLE!! This minestrone was insanely easy to make, and the recipe made so much that I have been able to come home, heat it up and be satisfied for dayz. What are your meal prepping hacks? 2 cups chicken broth
2 cans stewed tomatoes
1 can kidney beans
1 can of bean of choice (I chose great northern)
All the veggies of your choice OR 1 bag frozen veggies (I chose frozen mixed veggies because I was testing this recipe for my internship)
Dash of pepper
(Bring to a boil then add 1-2 cups pasta of your choice and simmer until pasta is tender.)

I was going to make a prosciutto and pea risotto, but to make it more nutritious I used short grain brown rice. To get some of the creaminess I melted some @daiyafoods mozzarella style shreds on top. A perfect hot winter lunch!

Cold weather calls for a Creole classic of Red Beans and Rice. Is there anything better then spicy Cajun food on a cold winter night? I simplified the traditional recipe using canned beans, but I also made this dish HEALTHY and LOW CARB.NO, it's not too good to be true! And YES, it is just as satisfying! Here's what I used:
2 Cans red beans, do not drain
1/2 pack of Spicy adouilee sausage, sliced (sub turkey sausage if you want to healthify it even more. I am watching my meat intake so only used half the pack.)
1 red onion, diced
6 garlic cloves, minced
1 green bell pepper, diced (I forgot mine!)
2 heads cauliflower, riced
1 cup water
1.5 tbsp. Extra virgin olive oil
1.5 tbsp. Of butter
1 fresh jalapeno, sliced (optional)
Seasonings: black pepper, Tony Chacheres, garlic powder, thyme- to taste.( Let's be real, everyone knows when cooking Creole food you don't measure seasonings!!)
Here's what I did:
Heat 1.5 tablespoons extra virgin olive oil
In a deep pan over medium heat. Once hot, throw in onions bell peppers and cook until fragrant, about 5 minutes. Then add in your garlic cloves, sliced sausage, and a splash of water. Cook for about 5 minutes, flip the sausage and cook on the other side.
While this is cooking, pour the beans in a pot and begin to heat. If you want to do this th traditional way, smash about 1/4 of the beans against the side of the pot as they cook. This helps to thicken it. Stir in your vegetable and sausage mixture into the beans, adding 1 cup of water and seasoning genorously! Stir well, place on lid, and let cook while you tackle the last part- the cauliflower "rice"!
Melt the butter over medium/high heat in the pan you just used to cook the sausage.Add in the rice (see my old posts about ricing your own) and stir to try and get the butter distributed throughout. Season with black pepper, a little Cajun seasoning (gives it a brown rice like color) and garlic powder. Seasoning is key here! Cooks in about 5 min.
Add 1 heaping scoop of "rice" to plate, top with
Sausage and bean mix, jalapeno and TOBASCO. Store the rest for later w/rice in separate container.ENJOY!💕

Make it ➡➡ I sautéed one bag of @traderjoes shredded Brussels sprouts in bacon fat. When the started to caramelize, I added in chopped bacon and some parsley. I plated the sprouts and added a fried egg and goat cheese on top. Yum!!!

Who wants to feel crappy and sick in bed with nothing left to do but stare at the ceiling (...like me, right now)?! Blegh. If that winter flu comes fighting in full force, these grilled cheeeeese and garlic croutons might just be your perfect partner in crime. Give it a shot. A little butter, salt, pepper, garlic, Parmesan and leftover bread is a perfect addition to your classic tomato soup (or any other, really).... Plus it requires 0 to little effort so you can start feeling better ASAP. 😷👎🍞

I THINK I HAVE SUPER POWERS? 🤨
Drizzle some oil, add the following..
-salt & pepper.
-piri piri salt, chili powder.
-paprika, oregano, rosemary.
-cumin, garam masala.
-tandoori masala & bread crumbs.
If you haven't noticed by now, I basically added every single herb & spice I had 🤷♀️ not so much cooking as it is throwing in everything you see 👀
Bake for 25-30min at 180C/350F.
One pot. 4 minutes. Need I say more? I’m SO excited to share this one with you guys. Here’s how it all goes down 👅👅👅 1.) You’re going to put whole wheat pasta, (it holds up better than white pasta) small pieces of seasoned chicken, (the smaller the better, you want it to cook through in the 4 minutes) water, butter, and salt in the bottom of the instant pot.
2.) Then, you can rest a steamer basket on top of all that, (yep, it’s fine) and add broccoli florets.
Note: Originally I tried this with the broccoli added directly in with the pasta & chicken. This works totally fine taste-wise, but the broccoli turned everything an unappetizing dark green color. I recommend using a steamer basket to separate everything until the final step, but it’s not necessary if you don’t have one.
3.) Seal the lid, seal the vent, and set to “Manual” for 4 minutes, (this is the default when you press “Manual”). The Instant pot will take about 15 minutes to heat up, and then the 4 minute countdown will begin. Don’t be alarmed if it makes weird hissing noises. It’s all good under the hood.
4.) Release the pressure immediately after time is up by turning the valve to “vent”. Be careful of the steam! Once the steam escapes, remove the lid. If you let it sit in there too long after the time is up it will all turn to mush. DO NOT DRAIN THE EXCESS WATER.
5.) Remove the broccoli and set aside. Stir in the milk and cheese, (you’ll need to stir for a minute or two until it all comes together- persevere!) and then stir in the broccoli last.
YOU’RE DONE. Wasn’t that easy?

Food is a funny thing. Although my mission in life is to promote a plant based diet for health, I can’t ignore the ethical reasons for a plant based diet and how really what we eat, what we choose to eat, is not linear. There are so many reasons why people are confused about nutrition, so many reasons why people eat what they eat. It’s so fascinating how so many things influence our most basic need, fueling our bodies.

For breakfast this morning I BAKED my PB&J and banana toast and I am currently sitting here wondering what i have been doing all of my life. Toast deets: 2 slices gluten free bread with homemade peanut butter and raspberry chia jam, sliced banana, bee pollen, walnut pieces, and cinnamon. Bake on a cookie sheet at 350F for 10 minutes and voila #toasttuesday

Mini lemon poppy seed muffins. Gluten free and very low sugar. Perfect option for a Sunday brunch treat 🍞
Recipe for Lemon Poppy Seeds muffins
1 cup of almond flour
1 tsp or baking powder
Zest of 1 full lemon
2 tbsp of poppy seeds
1/2 cup of melted coconut oil
2 tbsp of organic maple syrup
Mix all wet Ingredients together ( oil, syrup, egg) and then slowly add the flour into the mixer. Fold in zest and poppy seeds. Place in greased muffin tins and bake at 400 for 10 min.

So I was craving Chipotle but didn't feel like driving into town but also didn't want to full on cook... I came up with this fajita bowl. Make it ➡➡ slice a ripe plantain into slices, season with salt and pepper and cook over medium heat in ghee (I like @tinstarfoods) until golden brown. Then slice up an onion and 2 bell peppers thinly, cook in ghee over medium heat add 1 tbs of taco seasoning. When done add in two cups or so of shredded rotisserie chicken and some more taco mix to taste. Serve with smashed avo, pico and a dollop of @greenvalleyorganics sour cream.

•1/2 tablespoon cacao •vanilla extract •almond extract •two dates to sweeten it
Topped with almonds, cacao nibs, and coconut to make it more “Almond Joy” tasting😋🥥🍫
