My sugar free month continues and it’s going quite well. It’s obviously a real challenge from a cocktail perspective, but one that I enjoy, because it makes me think outside the box.
This time I’ve decided to go back to a trustworthy favorite of mine – the beer cocktail. Especially in this case, it’s a great way to bring loads of flavor without any added sugar.
I’m a big fan of sour beer and when I went through my cabinet I found a bottle of this delicious saffron sour from Swedish brewery @brekeriet. This beer was a limited release last Christmas and is inspired by these sweet saffron buns that we eat tons of here in Sweden during Christmas time. I absolutely love them, and saffron in general, so this beer is right up my alley.
I paired it with a spiced rum and some bitters for a really refreshing hoptail. It’s a summer drink with winter flavors – how ‘bout that?

Had the pleasure of conceptualizing, developing, and executing a four course Valentine's Day beer cocktail pairing menu alongside some very talented people at the Skagway Brewing Company last weekend. The theme this year was surf and turf. Descriptions of dishes and beer cocktail pairings are: Amuse Bouche-Ahi tuna and beef tartare "poke style" with a kimchi vinaigrette. 1st Course- Pork and Shrimp Xiao Long Bao(soup dumplings) with both black vinegar/soy and red vinegar/ginger dipping sauces, pairing "Prospector Mule" Skagway vodka, Ginger syrup, Prospector Pale, lime, angostura bitters. 2nd course- Oysters and Foie Gras, fried oysters, blood orange supremes, foie gras torchon, foie gras mousse, vanilla sabayon, port/onion gastrique, pairing "Beergroni" Skagway gin, Campari, sweet vermouth, simple syrup, Chilkoot Trail IPA. 3rd course- Halibut cheeks and Roasted bone marrow, Parmesan polenta, Cabernet jus, pan roasted halibut cheeks, roasted bone marrow with oat/thyme streusel, grilled lemon, pairing "Hoppy Velvet" hopped Apple cider, Blue Top Porter, rhubarb bitters. 4th course- Chocolate panna cotta, chocolate/orange ganache, pistachio toffee crumble, roasted orange, pairing "Sprucehound" Skagway vodka, fresh Grapefruit juice, simple syrup, Spruce Tip Ale. For those of you who got President’s Day off, why not finish the long weekend strong with this boiler maker beer cocktail featuring a shot of @barenjagerhoney liqueur poured into a pint of @weihenstephanusa Hefeweizen (the latter is worth a German pronunciation lesson!). 🍺🍯🐝😋 For those of you who didn’t have this Monday off, a Monday happy hour may just be calling your name. 😅 This sweetened concoction goes perfectly with the pictured Brettljause (arrangement ideas and recipes for 2 spreads on the blog right now)! I enjoy a good beer but typically can only have one because of the bloat. I love beer cocktails, but find only seasoned bartenders are able to create that perfect balance. @thenickb of @porchlightbar creates this clever cocktail that resembles a beer, has accentuated the flavors in an IPA, but not the bloat. It’s so so perfect!

I thought I was going to have to wait until the weather warmed a bit to post this beer cooler. It just seemed strange to post it in the middle of winter. But then it dawned on me that the #superbowl is soon, and although football is really not my thing, if I had to watch it, I’d want one of these in hand 😂 Two ingredients - IPA & the calamansi juice cooler from @traderjoes ( #notsponsored) - I bought some of the calamansi cooler because their cute, tiny cans caught my attention, and then started mixing it with the IPA @waynebremser keeps in the refrigerator - maybe the best thing ever - bitter, sweet, spritzy, refreshing 🤗🤗🤗 I’ll link to the details/recipe 👆🏼👆🏼👆🏼
